純素聖誕老人杯子蛋糕

Lemon Cupcakes

Ingredients:

Flour 120g

Baking powder 1/2 tsp

Baking soda 1/2 tsp

Salt 1/2 tsp

Soymilk 120ml

Sugar 80g

Vegetable oil 4 tbsp

Lemon juice 4 tbsp

Lemon zest 2 tsp

Strawberries 6-8pcs

 

Directions:

1. Preheat the oven to 180C.

2. In a mixing bowl, sift together the flour, baking powder, baking soda and salt.

3. In another mixing bowl, whisk together the soymilk, sugar, oil, lemon juice and

lemon zest.

4. Use a spatula to stir the dry ingredients. Make a well in the dry ingredients then

pour the wet ingredients into the well. Mix the ingredients and stop when the batter

is just combined.

5. Fill each cupcake liner 3/4 full with the batter. Bake 15-18 minutes.

6. Allow cupcake to cool completely before frosting.

7. Cut the strawberries 3/4 from the pointed end to make the Xmas hats. Pipe the

whipped cream on the strawberries. Place the hats back to the strawberries and pipe

a small ball of cream on top of the hats. Place two black sesame seeds into the

cream with a wet chopstick to make eyes.

8. Pipe the cream on the cupcake. Place the strawberry Santas on top and serve.

 

Vegan Whipped Cream (6-8 serves):

Ingredients:

Soymilk 1/4 cup

Maple syrup/ Agave syrup 1 tbsp

Vanilla extracts 1/2 tsp

Vegetable oil 1/2cup

 

Directions:

1. Add the soymilk, syrup, vanilla extracts and half of the oil into a blender.

2. Blend the ingredients and gradually add the remaining oil into the mixture.

3. Stop until the cream forms stiff peaks.

 

檸檬杯子蛋糕

材料:

麵粉120克

泡打粉1/2茶匙

蘇打粉1/2茶匙

鹽1/2茶匙

豆漿120毫升

糖80克

植物油4湯匙

檸檬汁4湯匙

檸檬皮2茶匙

草莓6-8pcs

做法:

  1. 烤箱預熱至180℃。
  2. 在攪拌碗,混合篩過的麵粉,泡打粉,蘇打粉和鹽。
  3. 在另一個攪拌碗,混合豆漿,糖,油,檸檬汁和檸檬皮。
  4. 然後將乾材料倒入濕的材料,混合配料和略略攪拌。
  5. 填滿每個蛋糕盤至3/4的位置,烤15-18分鐘。
  6. 讓蛋糕完全冷卻。

素食奶:

材料:

植物油1 / 2cup

做法:

  1. 豆乳,糖漿,香草提取物和半油放入攪拌機。
  2. 逐漸剩餘油添加到混合物中,直到霜的形式僵硬的高峰。
