純素蘿蔔花環蛋糕

Ingredients:

1 cup coconut sugar*
2 Neat Eggs (1 Tbsp Neat Egg powder + 2 Tbsp water)*
Grated orange zest
⅓ cup olive oil*
200 g coconut milk*
2 carrots, grated
2 cups gluten-free flour mix
1 tsp baking powder
1 tsp cinnamon*
1 tsp ground ginger*
1 tsp ground nutmeg
½ tsp cardamom
A few cloves, freshly ground

Optional:
Top with Coconut Milk + Vanilla Powder (mixed together)*

Directions:

  1. Preheat oven to 180 degrees C.
  2. Whisk together the sugar, egg replacement and orange zest.
  3. Add in the olive oil, coconut milk and carrots and mix together.
  4. Sieve into the mixture all the dry ingredients and fold in until it all comes together.
  5. Pour mixture into a bundt tin and pop into the oven for 30 minutes or until skewer comes out clean.
  6. Pop out of the tin and cool on a wire rack.

1杯椰糖*
2隻Neat Eggs (1湯匙Neat Egg粉加2湯匙水)*
橙皮碎
⅓杯橄欖油*
200克椰奶*
2根胡蘿蔔
2杯無麩質麵粉*
1茶匙baking powder
1茶匙肉桂*
1茶匙薑末*
1茶匙肉荳蔻
半茶匙荳蔻
一些丁香,現磨

可選:
頂配椰奶+香草粉(混合在一起)*

做法:
把糖,Neat Eggs和橙皮混合。
加入橄欖油,椰奶和胡蘿蔔,並混合在一起。
篩入乾的材料,攪拌至呈粉糰狀
將混合物倒入一個蛋糕模烤30分鐘。
放涼後便可淋上椰奶享用。
