材料:

猴頭菇 (切碎)1隻
小饅頭 (掰碎)4個
牛肝菌 (切碎)20克
雞蛋1隻
馬蹄 (切粒)3粒
甘筍 (切粒)1/3條
鹽適量
胡椒粉適量
菇粉1茶匙
秘製紅燒汁 2湯匙
乾蔥 (切片) 1粒
蔥 (切段) 10克
薑 (切絲) 10克
生粉芡 1湯匙

做法:

1.以清水浸泡牛肝菌,然後瀝乾
2.以清水浸發猴頭菇,將菇內的水擠壓乾淨,重複兩至三次以去除苦味
3.將猴頭菇、牛肝菌、馬蹄、甘筍切好,饅頭以手掰碎。
4.將蛋漿加入(3)中拌均,並加入適量鹽、胡椒粉、菇粉調味。拌均後放入雪櫃冷藏約10分鐘。
5.用手將(4)搓成球狀。
6.開油鑊,以中高火將獅子頭炸至金黃,撈起備用。
7.另開油鑊爆香乾蔥、薑絲、蔥段,加入適量清水,放入紅燒汁煮勻,加入生粉芡。
8.將炸好的獅子頭加入(7)中,燴至入味即可。

Ingredients:

Hericium (chopped) 1
Small chinese bread  4
Boletus (chopped) 20 g
1 egg
Water Chestnut (diced) 3
Carrot (diced) 1/3 Article
Salt to taste
Pepper to taste
Mushroom powder 1 teaspoon
2 tablespoons teriyaki sauce secret
Dry onions (sliced) 1
Onion (cut) 10 g
Ginger (shredded) 10 g
1 tablespoon cornstarch gravy

Directions:

1. Soak Porcini mushrooms with water, then drain.
2. Soak Hericium mushrooms with water, then squeeze the water out of the mushroom , repeat two to three times to remove the bitterness.
3. Chop the Hericium, porcini mushrooms, water chestnuts,  carrots. Separate the Chinese bread into small pieces by hand.
4. Place the egg mixture is added (3), mix well and add salt, pepper, mushroom powder for seasoning. Put the mix into freezer for about 10 minutes.
5. Use hand to create dough from the mix (4) .
6. Switch the stove on to medium high heat and  fry until golden, ready to use.
7. Cook the sauce separately with shallots, ginger, scallion, add water,. Then, add teriyaki sauce cook with low heat, add cornstarch to create texture.
8. add dough to (7), cook with low heat and serve.
