INGREDIENTS

  • 1 tablespoon Zucchini, diced
  • 1 tablespoon Red bell pepper, diced
  • 1 tablespoon Yellow bell pepper, diced
  • 1 tablespoon Mushroom, diced
  • 1 tablespoon Baby corn, diced
  • 1/3 bowl Cooked chickpeas
  • 1/3 bowl Cooked red kidney beans
  • 1 bowl Cooked whole wheat spaghetti
  • 1/2 bowl Cooked broccoli (Side vegetables)

SEASONINGS

  • 1 teaspoon Corn oil
  • 1 tablespoon Flour
  • 1/2 teaspoon Sugar
  • 1/6 teaspoon Salt
  • Pinch White pepper

SAUCE

  • 1/2 bowl Red bell pepper
  • 120 ml Soy milk

 

DIRECTIONS
1. Blanch the zucchini, red bell pepper, yellow bell pepper, mushroom and baby corn. Drain and set aside.
2. Remove seeds from the red bell pepper after washing. Blend it with the soy milk until it becomes a sauce in a mixer.
3. Add oil to a heated frying pan. Pan-fry the flour and add the sauce and the rest of the seasonings until cooked.
4. Add the blanched vegetables, chickpeas and red kidney beans to the pan and cook thoroughly.
5. Serve with spaghetti and side vegetables.

  • 翠玉瓜 (切粒) 1湯匙
  • 紅椒 (切粒) 1湯匙
  • 黃椒 (切粒) 1湯匙
  • 蘑菇 (切粒) 1湯匙
  • 珍珠筍 (切粒) 1湯匙
  • 熟雞心豆 1/3碗
  • 熟紅腰豆 1/3碗
  • 熟全麥意粉 1碗
  • 配菜:熟西蘭花 1/2碗

調味料

  • 粟米油 1茶匙
  • 麵粉 1湯匙
  • 糖 1/2茶匙
  • 鹽 1/6茶匙
  • 白胡椒粉 少量

芡汁

  • 紅椒 1/2碗
  • 豆奶 120毫升

烹調步驟
1. 翠玉瓜、紅椒、黃椒、蘑菇、珍珠筍用熱水烚熟,瀝乾水,備用。
2. 紅椒洗淨去核,加豆奶以攪拌機打勻成芡汁。
3. 燒熱平底鑊下油,炒香麵粉,加入芡汁和其他調味煮滾。
4. 放入已烚熟蔬菜、雞心豆和紅腰豆,並煮至熟透。
5. 加入意粉和配菜,即成。
