Beetroot Black Bean Falafels

INGREDIENTS

  • 1 cup Shredded beetroot
  • 1 1/2 cup cooked black beans
  • 4 brown button mushrooms (chopped)
  • 3 Tbsp Chickpea flour
  • 1 Tbsp apple cider vinegar
  • 1 tsp coconut nectar
  • 2 cloves garlic
  • 1/2 small onion
  • 1 tsp ground cumin
  • 1/2 tsp sea salt
  • 1 tsp paprika
  • Black pepper to taste
  • 1/2 cup parsley
  • 2 tsp sunflower seed oil or sesame oil
  • 1/4 cup carrot pulp from making carrot juice (optional)

 

DIRECTIONS

  1. Preheat oven to 180°C
  2. Place beetroot, mushrooms and cooked black beans into a food processor and process until coarsely chopped. You don’t want to have a smooth mixture so that the falafels are richer in texture.
  3. Add in the other ingredients into the food processor and process until it forms a dough-like mixture, add more chickpea flour if the mixture is too wet.
  4. Scoop out 1 Tbsp of the mixture and shape them into a ball. Slightly flatten them upon placing on the baking tray. Bake for 15 minutes on one side or until lightly brown and crispy.  Then, flip and bake for another 10 minutes on the other side.
  5. Serve them warm with tahini.

  • 紅菜頭(刨絲)一杯
  • 黑豆(煮熟)1 1/2杯
  • 啡色小蘑菇 (切粒)4個
  • 鷹嘴豆粉 3湯匙
  • 蘋果醋 1湯匙
  • 椰子花蜜 1茶匙
  • Cumin 1茶匙
  • 海鹽 1/2茶匙
  • 西班牙甜椒粉 1茶匙
  • 黑椒 少許
  • 芫茜 1/2杯
  • 葵花子油或芝麻油 1湯匙
  • 蘿蔔渣 1/4杯 (視乎個人喜好)
方法
  1. 預熱焗爐至180度
  2. 將紅菜頭,黑豆,切粒蘑菇放入食物調理器約略攪拌
  3. 把其他食材加入食物調理器直至呈粉糰狀態
  4. 每次取出一湯匙混合物,搓成圓球,放上焗盤,輕輕壓扁
  5. 焗約15分鐘,翻面再焗10分鐘即可
