Baked Veggies n' Eggs

INGREDIENTS

  • 5-6 small potatoes, cut in edible sizes as you like
  • 1 handful cherry tomatoes, halved
  • 1 bowl spinach
  • 1 handful fresh parsley, chopped
  • 1/2 can diced tomato, dilute it with 1/4 cup of water
  • 2 eggs
  • 2 cloves of garlic, chopped
  • 1-2 tbsp grated parmesan
  • 1 sprig fresh sage, chopped
  • Extra-virgin olive oil

INSTRUCTIONS

  1. Preheat the oven at 380°F
  2. Drizzle some oil on the baking tray, add potatoes, sage, and season.
    Bake for 15 minutes
  3. Add spinach, chopped tomato, garlic, and water. Season.
    Bake for 10 minutes
  4. Crack 2 eggs on top of the vegetables. Bake for another 5 minutes
  5. Remove from oven. Garnish with grated parmesan and fresh parsley before serving.

成分

  • 5-6小薯仔,切成小塊(隨個人喜好)
  • 1小把車厘茄,對半切開
  • 1碗菠菜
  • 1把新鮮香菜,剁碎
  • 1/2罐頭番茄丁,加入1/4杯水稀釋
  • 2顆雞蛋
  • 2瓣大蒜,切碎
  • 1-2湯匙磨碎的巴馬乾酪 (帕馬森乳酪)
  • 1小枝新鮮的鼠尾草,剁碎
  • 特級初榨橄欖油

做法

  1. 預熱烤箱到380°F。
  2. 把橄欖油淋入烤盤上,放入薯仔,鼠尾草并調味。
    烤15分鐘。
  3. 加入菠菜,番茄丁,大蒜和水。調味。
    烤10分鐘。
  4. 在蔬菜上面打2顆雞蛋。再烤5分鐘。
  5. 從烤箱中取出。撒上巴馬乾酪碎絲與新鮮香菜。
