INGREDIENTS

  • 1/4 bowl Eggplant, wedged
  • 1/4 bowl Zucchini, wedged
  • 2 1/2 pieces Dried bean curd, wedged
  • 1 slice Low-fat cheese
  • 1/4 piece Red bell peppers, wedged
  • 1/4 piece Yellow bell peppers, wedged
  • 1 bowl Cooked red rice
  • 1/2 bowl Cooked cauliflower (side vegetables)

SEASONINGS

  • 1 teaspoon Olive oil
  • 1 teaspoon Minced garlic
  • Pinch White pepper
  • 1/6 teaspoon Salt
  • 1 tablespoon Water
  • 1/2 teaspoon Thyme

DIRECTIONS

  1. Add oil to a heated frying pan. Sauté minced garlic until aromatic. Excluding the peppers, add all the wedged ingredients into pan and stir-fry.
  2. Add a pinch of pepper and salt for seasoning, then cook briefly with water and cheese. Add the bell peppers and sprinkle thyme on the top. Stir-fry until cooked.
  3. Serve with red rice and side vegetables.

  • 翠玉瓜 (切角) 1/4碗
  • 白豆乾 (切角) 2 1/2塊
  • 低脂芝士 1片
  • 紅椒 (切角) 1/4 個
  • 黃椒 (切角) 1/4 個
  • 熟紅米飯 1平碗
  • 配菜:熟椰菜花 1/2碗

調味料

  • 橄欖油 1茶匙
  • 蒜蓉 1茶匙
  • 白胡椒粉 少量
  • 鹽 1/6茶匙
  • 清水 1湯匙

烹調步驟

  1. 燒熱鑊下油,爆香蒜蓉。除什椒外,將已切角的材料下鑊同炒。
  2. 以少許胡椒粉和鹽調味,再加入少許清水及芝士略煮,後放入什椒並撒上百里香,熟煮上碟。
  3. 最後,加入紅米飯和配菜,即成。
