白菜南瓜雪耳素湯 

Bok Choy, Pumpkin and Snow Fungus Vegetarian Soup

食譜特色

  • 潤肺美顏,舒緩面色蒼白、嗜睡、容易出汗等症狀。

材料:

  • 大白菜 4棵
  • 小南瓜 1個
  • 蘋果 2個
  • 雪梨 2 個
  • 漳州雪耳 1塊
  • 野生黃耳 1塊
  • 紅腰豆 30克
  • 陳皮 1片
  • 蜜棗 3粒
  • 杏仁 15克
  • 水 2.5公升

烹調步驟:

  1. 大白菜反覆泡洗幾次。南瓜、蘋果和雪梨洗淨,去皮,去核,切塊備用。
  2. 雪耳和黃耳泡水1小時至軟身,剪掉雪耳底黑色物再切塊備用。紅腰豆和陳皮洗淨備用。
  3. 鍋內加入2.5公升水,水滾後放入所有材料。材料煮滾後調中小火煲1小時,加鹽調味即可。

烹調小貼士

  • 泡洗大白菜時加鹽於水內可幫助除蟲。

Ingredients:

  • Bok choy 4 bunches
  • Small pumpkin 1 pieces
  • Apple  2 pieces
  • Pear   2 pieces
  • Jiang Zhou snow fungus 1 pieces 
  • Wild yellow snow fungus   1 pieces
  • Red kidney bean 30 gram
  • Dried mandarin peel 1 pieces
  • Dried date 3 pieces
  • Almond 15 gram
  • Water 2.5 litres

Cooking Steps:

    1. Wash bok choy several times. Wash, skin and deseed the pumpkin, apples and pears. Chop into pieces and set aside.
    2. Soak the snow fungi and yellow fungus for 1 hour until soft. Remove the black bits from the snow fungus and chop both fungi into pieces. Set aside. Wash the kidney beans and mandarin peel and set aside.
    3. Pour 2.5 litres of water into a pot and bring to a boil. Add in all the ingredients. Bring it to a boil again and reduce to medium-low heat and simmer for 1 hour. Season with salt.

Cooking Tips

  • Adding salt in to the water when washing bok choy can help drive out insects.
