椰奶湯

香濃南瓜椰奶湯  Creamy Coconut Pumpkin Soup

材料:

  • 南瓜 (切粒) 1公斤
  • 番薯 (切粒) 1個
  • 洋蔥 (切粒) 1/2個
  • 水 1公升
  • 椰奶 100毫升

調味:

  • 鹽 適量
  • 橄欖油 少許
  • 牛油 15克
  • 紅椒粉 少許
  • 黑胡椒碎 少許
  • 百里香港 少許

烹調步驟:

  1. 大火燒熱鍋,下橄欖油將洋蔥和百里香爆香。加入南瓜和番薯,炒勻後加入牛油和水,轉中火加蓋煮30分鐘。
  2. 用攪拌器把材料打至順滑,加入椰奶。煮滾後,加入鹽和黑胡椒碎調味,最後以少許椰奶及紅椒粉作點綴即成。

Ingredients:

  • Green apple (thickly sliced & deseeded)   180g
  • Pumpkin (diced) 1kg
  • Sweet potato (diced) 1 piece
  • Onion (diced) 1/2 piece
  • Water 1litre  
  • Coconut milk 100ml

Seasonings:

  • Salt o tase
  • Olive Oil drizzle
  • Butter 15g
  • Cayenne pepper pinch
  • Crushed black pepper pinch
  • Thyme  a little

Cooking Steps:

  1. Heat a pot over high heat and fry the onion and thyme with olive oil. Toss in the pumpkin and sweet potato. Then add butter and water. Adjust to medium heat and cook with the lid on for 30 minutes.
  2. Blend the ingredients in a food processor until smooth. Add coconut milk and bring to a boil. Season with salt and crushed black pepper. Drizzle some coconut milk and sprinkle cayenne pepper to serve.
