INGREDIENTS

  • ¼ block Firm tofu
  • Small amount of Sesame seeds
  • 1 tablespoon Enokitake mushroom, diced
  • Small amount Original seaweed shreds
  • 1 tablespoon Corn kernels
  • 1 bowl Cooked red rice
  • 1 tablespoon Carrot, shredded
  • ½ bowl Side vegetables: Cooked Shanghai pakchoi
  • 1 piece Egg

SEASONINGS

  • 2 teaspoons Corn oil
  • 1/5 teaspoon Salt
  • Pinch White pepper
  • Pinch Curry powder

DIRECTIONS

  1. Use a heavy object to press the tofu for 20 minutes. Drain and press with hands until it turns into a paste.
  2. Heat up 1 teaspoon oil with a frying pan, add tofu paste, enokitake mushrooms, corn kernels, carrot and seasonings. Pan-fry evenly.
  3. Drain and cool pan-fried ingredients. Add beaten egg.
  4. Heat up 1 teaspoon oil with a frying pan. Add mixed tofu paste and pan-fry until both sides are golden brown. Sprinkle sesame and seaweed shreds on top.
  5. Serve with red rice and side vegetables.

食材

  • 硬豆腐  1/4磚
  • 芝麻 少量
  • 金菇 (切粒)  1湯匙
  • 原味紫菜碎 少量
  • 粟米粒  1湯匙
  • 熟紅米飯一平碗
  • 甘筍 (切絲)  1湯匙
  • 配菜:熟小棠菜  ½碗
  • 雞蛋  1隻

調味料

  • 粟米油 2茶匙
  • 鹽 1/5茶匙
  • 白胡椒粉 少量
  • 咖喱粉 少量

烹調步驟

  1. 用重物把豆腐壓 20分鐘,隔水後用手壓成豆腐泥。
  2. 燒熱平底鍋加1茶匙油,下豆腐泥、金菇、粟米粒、甘筍及調味料拌炒均勻。
  3. 炒好的材料隔水放涼後,加入已打散的雞蛋。
  4. 燒熱平底鍋加1茶匙油,把豆腐混合料放入鍋中,煎至兩面呈金黄色後,撒上芝麻及紫菜碎。
  5. 最後加入紅米飯及配菜即成。
