材料︰

雞蛋 …… 2隻
沙糖 …….90 g
麵粉 ……. 100 g
泡打粉 …….3/4茶匙
無鹽牛油……. 100g
檸檬 …….1個

做法︰

1. 雞蛋從雪櫃取出放至室溫。牛油隔水煮溶及稍為放涼,檸檬先磨皮及榨汁。麵粉及泡打粉一同過篩。
2. 蛋及糖混合打至顏色變淺及起泡。再加入其他材料拌勻至沒有粉粒。靜置20分鐘。
3. 此時,預熱焗爐至190。C,並將瑪德蓮模掃上牛油及灑上麵粉(材料在份量以外)或用cake release抺或噴在糢上。
4. 粉漿靜置20分鐘後,倒入模中至8分滿。放入焗爐焗約8-10分鐘至表面拱起即成。取出並立即脫模放在網架上置涼。

純素版本

材料:
椰奶 120ml
麵粉 60g
白醋 1茶匙
泡打粉 半茶匙
梳打粉 1/8 茶匙
鹽 1/8茶匙
糖 50g
雲利那香油 半茶匙

做法:
1. 預熱焗爐至180。C,並將瑪德蓮模掃上牛油及灑上麵粉(材料在份量以外)或用cake release抺或噴在糢上。
2. 將醋加入椰奶拌勻、靜置一會至杰身。
3. 將糖、麵粉、梳打粉、泡打粉及鹽放入大碗內用打蛋器拌勻。
4. 將雲利那香油加入1拌勻。
5. 將4加入3,用膠刮輕力拌勻,不要過度攪拌。
6. 倒入瑪德蓮模至8分滿,放入焗爐焗約15分鐘至表面開始金黃即成。取出脫模放在網架上放涼。

INGREDIENTS

Baking powder …….3/4 tsp
Unsalted butter…… 100 g
Lemon…… 1

INSTRUCTIONS

1. Leave the eggs out of the fridge till they are at room temperature. Melt the butter over a bain marie and set aside to cool slightly. In a separate bowl, zest and juice the lemon. Sieve the flour and baking powder together into a separate bowl.
2. Beat the eggs and sugar till light and foamy. Fold in the other ingredients till the mixture is smooth and lump free. Set aside for 20 minutes.
3. Meanwhile, preheat the oven at 190。C. Prepare the Madeleine pans by brushing melted butter and dusting with flour (not on the ingredients list) or apply cake release.
4. After leaving the batter for 20 minutes, spoon it into the tray. Bake for 8-10 minutes. Carefully lift the cakes out of the tray and transfer onto a wire rack to cool.

Vegan version

ngredients:
Coconut milk 120ml
Flour 60g
Distiller white vinegar 1tsp
Baking powder 1/2tsp
Baking soda 1/8tsp
Salt 1/8tsp
Sugar 50g
Vanilla Extract 1/2tsp

Method:
1. Preheat the oven at 180。C. Prepare the Madeleine pans by brushing melted butter and dusting with flour (not on the ingredients list) or apply cake release.
2. Add vinegar to the coconut milk and set aside to thicken up.
3. Whisk together sugar, flour, baking powder, baking soda and salt in a large bowl.
4. Add vanilla extract to 2 and mix well.
5. Add 4 to 3 and gently fold with a spatula.
6. Pour the batter into the pan filling the about moulds 80%full. Bake for about 15 mins when the top starts to turn golden. Release cakes from the tin and let cool on a wire rack.
