Mexican Breakfast Wraps

INGREDIENTS

  • 1/2 green capsicum (bell peppers), julienne
  • 1/2 red capsicum (bell peppers), julienne
  • 1/2 onion, finely chopped
  • 1tbsp cumin powder
  • 4 eggs
  • 1/2 cup grated cheddar cheese
  • 4 tortilla wraps
  • 4tbsp mayonnaise
  • extra-virgin olive oil

INSTRUCTIONS

  1. Preheat a frying pan with olive oil on medium heat, add onion and capsicums. Cook for 5-10 minutes. Stir occasionally to avoid burning the vegetables. Add cumin powder and season.
  2. Whisk 4 eggs in a bowl. Season. Add to the frying pan with the vegetables. Cook for 3-5 minutes on low heat. Turn off the heat.
  3. Preheat the oven at 180ºC.
  4. Place the tortilla wraps on a baking dish. Spread a tablespoon of mayonnaise evenly on each tortilla wrap.
  5. Transfer 1/4 of the vegetable omelette to the center of each tortilla wrap.
  6. Sprinkle the grated cheddar cheese to the omelette. Fold the two ends of each tortilla wrap gently before rolling. This will prevent the filling from falling out of the wraps.
  7. Bake the wraps in the oven for 2 minutes on each side.
  8. Transfer the wraps to a serving dish with some greens on the side if you like. And they are ready to serve!

  • ½洋蔥,剁細碎
  • 1湯匙孜然粉
  • 4顆雞蛋
  • ½杯碎切達乾酪
  • 4玉米餅 (墨西哥烘餅)
  • 4湯匙蛋黃醬/沙拉醬
  • 特級初榨橄欖油

做法

  1. 用中火預熱煎鍋裡的橄欖油,放入洋蔥、青椒及紅椒。炒5-10分鐘,煮意要不停攪拌以避免蔬菜燒焦。添加孜然粉和調料。
  2. 將4顆雞蛋在碗裡快速打散。加調料。和蔬菜一起入煎鍋。用小火煎3-5分鐘。關火。
  3. 烤箱預熱到180°C。
  4. 把玉米餅放在烤盤上并于每塊餅上均勻塗抹一湯匙蛋黃醬。
  5. 將1/4的蔬菜煎蛋放在每個玉米餅卷的中心。
  6. 將碎切達奶酪撒在蔬菜煎蛋上。卷之前輕輕的把餅的兩邊折一下,以防止餡料掉出。
  7. 放入烤箱烤2分鐘,翻面再烤2分鐘。
  8. 擺盤時可放些蔬菜在旁邊。
