Neat egg 純素聖誕花環蛋糕

材料:

蛋糕:
植物油 4湯匙
白沙糖 170g
Neat egg 1湯匙加2湯匙水拌勻 (或chia seed powder/ flax seed powder1湯匙加3湯匙水拌勻)
橙皮 1個磨蓉
橙汁 1個
無糖豆漿或米漿 加在橙汁上至120ml
麵粉 225g
泡打粉 2茶匙
鹽 半茶匙

糖衣:
霜糖:125g
檸檬汁 2-3湯匙
檸檬皮 1個磨蓉
各式乾果 適量

做法:
1. 預熱焗爐180。C,在環型模上抹油撤粉或抹上cake release。
2. 將植物油、糖及 已拌好的neat egg代蛋打發至均勻及糖溶化。加入豆漿及橙汁打勻。
3. 篩入麵粉、泡打粉及鹽,再輕輕拌勻。然後加入橙皮蓉拌勻。
4. 倒入蛋糕模、放入爐焗25-30分鐘即成。取出連模稍為放涼才脫模,放上網架放涼。
5.蛋糕完全放涼後,將霜糖過篩放入大碗內,續少加入檸檬汁並用打蛋器拌勻至幼滑及至想要的稀杰度。完成後淋在蛋糕上,再用檸檬皮及乾果裝飾。

Ingredients:

Cake:
4 tablespoons vegetable oil
170g sugar
1 tablespoon Neat egg plus 2 tablespoons of water and mix well
(or 1 tablespoon ground chia seed / ground flax seed  plus three tablespoons of water and mix well)
Orange peel from 1 orange
Orange juice from 1 orange
Sugar-free soy milk or rice milk added to the orange juice to make up to 120ml
225g flour
2 teaspoons baking powder
Half teaspoon salt

Glazing:
125g powdered sugar
2-3 tablespoons lemon juice
Lemon peel from 1 lemon
Dried fruits

Directions:

  1. Preheat oven 180 C. Grease the bundt cake mold with cake release.
  2. Place the vegetable oil, sugar and neat eggs in a bowl, mix well until all sugar has been dissolved. Beat in milk and orange juice.
  3. Sift in flour, baking powder and salt, then mix gently. Add in orange peel and mix well.
  4. Pour the mixture into the cake mold, bake for 25-30 minutes and serve.
  5. Remove from the oven and let it cool slightly before removing the mold and let it cool.
  6. When the cake is completely cooled, sift the powdered sugar into the bowl. Add lemon juice bit by bit until you reach the desired consistency. Pour on the cake, then top with lemon zest and dried fruits.
