Note: I used a 16 oz drinking jar for this recipe

INGREDIENTS

  • 3 Tbsp Carrot Dressing (Recipe below*) (or any dressing of your choice)
  • 1 small beetroot (or 1/2 large one) (Spiralized)
  • 1/2 bowl cooked chickpeas
  • 1/2 avocado
  • 1/2 bowl raw marinated mushrooms (Recipe below**)
  • 1/2 zucchini (Spiralized)
  • Handful of mixed greens and cherry tomato

INSTRUCTIONS

Place 3 Tbsp of carrot dressing at the bottom of the jar, followed by spiralized beetroot, chickpeas, chopped avocado, raw marinated mushrooms and zucchini noodles. Lastly, top the jar with a handful of mixed greens and cherry tomato.

RECIPE FOR CARROT DRESSING*

INGREDIENTS

  • 1 Carrot, chopped
  • 1 Yellow Bell Pepper, chopped
  • 1/2 Cup Filtered Water
  • 1/4 tsp Ground Cumin
  • 1 Tbsp Hemp Protein Powder (or whole hemp seeds)
  • Juice of 1 Lemon
  • 1/2 Tbsp Miso
  • 2 Tbsp Nutritional Yeast
  • 5 sun-dried tomatoes
  • Handful of coriander
  • 3 Tbsp tahini
  • 1 tsp Paprika
  • 1 Garlic Clove

 DIRECTIONS

Place everything into a blender and blend until smooth.

 

RECIPE FOR RAW MARINATED MUSHROOMS**

INGREDIENTS

  • 8 ounce packaged brown button mushrooms
  • 1/4 cup tamari
  • 2 tablespoons coconut oil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, minced
  • 1 tablespoon mixed herbs
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper

 DIRECTIONS

  1. Rub mushrooms with kitchen papers to remove any dirts on them and cut them into bite size
  2. Mix the marinates in a bowl until all ingredients combine together
  3. Place the chopped mushrooms into a clean plastic bag and pour the marinates onto the mushrooms
  4. Zeal the bag and shake vigorously
  5. Place the mushrooms into a glass jar and keep it in the fridge for at least 30 minutes. The longer it sits, the more intense the taste is

  • 大麻籽蛋白粉(或大麻籽) 1湯匙
  • 1個檸檬的檸檬汁
  • 味噌 1/2湯匙
  • 營養酵母 2湯匙
  • 蕃茄乾 5顆
  • 香菜 1把
  • 芝麻醬 3湯匙
  • 西班牙紅椒粉(Paprika) 1茶匙
  • 蒜頭 1瓣

做法

把所有材料放進食物調理器攪至順滑

醃製蘑菇食譜**

成分

  • 8安士褐色蘑菇
  • 醃料:
  • 天然醬油 1/4杯
  • 椰子油 2湯匙
  • 意大利黑醋 1湯匙
  • 蒜頭(切碎) 1瓣
  • 混合香草 1湯匙
  • 營養酵母 1茶匙
  • 黑胡椒 1/4茶匙

做法

  1. 以廚房用輕輕擦拭蘑菇表面,切成一口大小
  2. 把醃料材料放在碗裡攪拌,直到所有成分混合在一起
  3. 將切碎的蘑菇放入乾淨的塑料袋中,並倒入醃料,大力搖晃
  4. 將沾上醃料的蘑菇倒入一個玻璃瓶內,放如冰箱醃至少30分鐘。醃的時間越長,蘑菇的味道會越強烈
