Spicy Zucchini Pasta

INGREDIENTS

  • 1/2 zucchini, shredded or thinly sliced in edible size as you wish
  • 2 garlic, finely chopped
  • 2 sun-dried tomatoes, thinly chopped
  • 1 chili, finely chopped
  • 1/2 lemon zest
  • 1/3 lemon juice
  • 1 handful chopped parsley or basil
  • 1 tbsp parmesan
  • 100g cooked pasta, cook it according to the packaging label
  • save a little (1/4 cup) pasta water
  • extra-virgin olive oil

INSTRUCTIONS

  1. Preheat a saucepan with oil on medium heat
  2. Add garlic and chili, cook and stir to avoid burning for 1 minute
  3. Add zucchini and sun-dried tomatoes; cook for 5 minutes; season; heat off (if the pasta is not ready yet)
  4. Add cooked pasta and pasta water to the saucepan; stir for 30 seconds
  5. Add lemon zest, parmesan, and garnish with basil.
  6. Drizzle a little oil on top with a twist of lemon juice before serving

成分

  • ½根西葫蘆,切絲或切成如你所願的食用大小的片
  • 2顆大蒜,剁非常碎
  • 2油漬乾番茄,剁細碎
  • 1條辣椒,剁非常碎
  • ½顆削檸檬皮
  • 1/3檸檬汁
  • 1把切碎的香菜或九層塔
  • 1湯匙巴馬乾酪 (帕馬森乳酪)
  • 100克煮熟的麵條,按照包裝標籤煮
  • 留一點 (¼杯)麵湯
  • 特級初榨橄欖油

做法

  1. 用中火預熱漿鍋裡的橄欖油
  2. 加入大蒜和辣椒,炒1分鐘,攪拌為了避免燒焦
  3. 加入西葫蘆和油漬乾番茄; 炒5分鐘; 加調料; 關火 (如果麵還沒有準備好)
  4. 將煮熟的麵和麵湯倒入鍋裡; 攪拌30秒
  5. 加入削檸檬皮,巴馬乾酪,用九層塔點酌。
  6. 淋上橄欖油與檸檬汁
