Sweet Corn Soup

INGREDIENTS

  • 3 corn cobs, cooked, removed from cobs
  • 1.5 onion, finely chopped
  • 2 large carrots, diced
  • 6 small new potatoes, diced
  • 3 garlic cloves, finely chopped
  • 1 vegetable stock tablet
  • 2 bowls of water
  • extra-virgin olive oil

INSTRUCTIONS

  1. Preheat a pot with oil, add onion and garlic, cook for 5 minutes on medium low heat.
  2. Add the chopped vegetables to the pot and stir, cook for another 5 minutes.
  3. Add water and vegetable stock tablet to the pot. Bring the pot to boil for 5 minutes then simmer on low heat for 15-20 minutes.
  4. Use a blender to puree the soup and serve with a drizzle of olive oil and balsamic vinegar.

  • 3瓣大蒜,剁細碎
  • 1片濃縮蔬菜湯粉餅
  • 2碗水
  • 特級初榨橄欖油

做法

  1. 預熱湯鍋裡的油,加入洋蔥和大蒜,用中小火翻炒5分鐘。
  2. 將切碎的蔬菜加入鍋中,不停的攪拌,翻炒5分鐘。
  3. 加水和濃縮蔬菜湯粉餅。大火煮5分鐘至沸騰,然後小火煨15-20分鐘。
  4. 將上述的成品放入攪拌機中攪勻,配上一點橄欖油和香醋調味。
