Colored Pepper and Mushroom Sushi

Ingredients:

2 cups uncooked brown rice (washed, pre-soaked and cooked)
1 yellow pepper (washed)
1 red pepper (washed)
1/2 green pepper (washed)
Half of an eggplant (washed, sliced, lightly cut a few lines on the surface)
Half of a king trumpet mushroom (washed, sliced, lightly cut a few lines on the surface)

Sauce:

1 tbs brown rice miso
1 tbs agave syrup

Instructions:

1. Place red, yellow and green pepper slices on a baking sheet lined with parchment paper. Put the tray into a preheated oven and roast at 250 degrees for 20-30 minutes.   Colored pepper need to be baked until the skin is a little burnt before removing from the oven. When done, quickly place roasted peppers in a sealed glass container for about 15 minutes. Peel the skin off the peppers. Cut into small pieces; set aside.
2. Heat a little oil in a skillet, lightly sauté the eggplant and mushroom slices. Set aside.
3. Put about one to one and a half tablespoon of rice mixture into your hand, shape to form a small roll. Put a piece of colored pepper, eggplant or mushroom slice on the top. Repeat steps until you are finished the all the ingredients. Brush sauce over top of eggplant, mushrooms and peppers. Serve right away. Enjoy!

To prepare the sauce:

simply combine and mix the ingredients in a bowl.

醬汁:

1湯匙糙米味噌
1湯匙龍舌草蜜

做法:

1. 把紅,黃,綠椒同時放入已預熱的烘箱中,用250度火烤20-30分鐘。三色椒焗烤至表面稍微燒焦後才拿出,然後放入密封玻璃容器內,大約15分鐘。把椒皮撕下。切成小片;備用。
2. 在一個平底鍋內,把少許油燒熱。放入茄子和杏鮑菇片;輕輕煎熟。備用。
3. 稍微弄濕雙手,拿起約1至1湯匙半的糙米飯,然後捏成圓筒狀。放上三色椒片,茄子片或杏鮑菇片。重複步驟直至完成。塗上醬汁可。立即奉上。慢用!

醬汁做法:

把醬汁材料混合,拌勻即可。
