Veggies Fried Brown Rice

INGREDIENTS

  • 100g baby corn, chopped
  • 100g sweet snap peas, chopped
  • 100g hard tofu, diced
  • 1/2 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1-2 spring onion, finely chop
  • 1 handful fresh coriander, chopped (optional)
  • 1 tbsp chopped ginger
  • 1/4 cup rice wine
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp toasted sesame seeds
  • 2-3 bowl cooked brown rice
  • extra-virgin olive oil

INSTRUCTIONS

  1. Preheat the frying pan with olive oil, add garlic, onion, and ginger; stir and cook on medium-low heat for around 5 minutes
  2. Add baby corns and snow peas; cook for 2 minutes
  3. Add tofu and rice wine on medium-high heat
  4. After the alcohol has evaporated, add the cooked brown rice to the pan; stir and cook for 3-5 minutes
  5. Add soy sauce, sesame oil, and spring onion. Mix well. Season.
  6. Transfer the fried rice to a bowl and garnish with some sesame seeds, a little chopped spring onions and chopped coriander if you have any (I have some crispy seaweed here instead)

  • 100g 粟米芯, 剁碎
  • 100g 甜青豆, 剁碎
  • 100g 硬豆腐, 切片
  • 1/2 洋蔥, 剁細碎
  • 1 蒜辦, 剁細碎
  • 1-2 蔥, 剁細碎
  • 1 把新鮮香菜, 剁碎 (可不剁)
  • 1 湯匙 姜末
  • 1/4 杯 米酒
  • 4 湯匙 醬油
  • 2 茶匙 香油
  • 2 湯匙 烘烤過的芝麻
  • 2-3碗 熟糙米
  • 特級初榨橄欖油

步驟

  1. 將煎鍋中倒入橄欖油,預熱,添加蒜,洋蔥和姜;中小火煎煮5分鐘
  2. 加粟米芯和青豆;炒2分鐘
  3. 轉中大火,加豆腐和米酒
  4. 待米酒蒸發后,添加煮熟的糙米入鍋;煎炒3-5分鐘
  5. 添加醬油,香油及蔥。充分拌勻,調味
  6. 將炒飯倒入碗中,並用一些芝麻,蔥碎及香菜點綴。
