意式青瓜煎餅

意式青瓜煎餅 Zucchini Patties

材料:

  • 意大利青瓜 (刨絲)  2杯
  • 雞蛋 2隻
  • 洋蔥 (切粒) ½個
  • 麵粉/自發粉 (已篩) ½杯
  • 水牛芝士 ½杯
  • 巴馬臣芝士 ½杯
  • 蔥 (切粒) 2-3條
  • 車厘茄 5粒
  • 黑松露 適量

調味料:

  • 鹽 適量
  • 胡椒 適量
  • 豆蔻 適量
  • 油 2湯匙

醬汁:

  • 酸忌廉 50克

烹調步驟:

  1. 意大利青瓜以鹽、胡椒和豆蔻調味。
  2. 麵粉加雞蛋及1湯匙油,攪拌成糊狀。意大利青瓜擠出多餘水份。
    把意大利青瓜、洋蔥和兩種芝士加進麵糊拌勻。
  3. 燒熱鑊下油,麵糊以1湯匙大小放進鑊內,煎至兩面呈金黃色。
  4. 煎餅上碟,放上酸忌廉、蔥粒、車厘茄及黑松露作裝飾即成。

Ingredients:

  • Zucchini (grated) 2 cups
  • Egg 2 pieces
  • Onion (diced) ½ piece
  • Flour/Self-raising flour (sieved) ½ cup
  • Mozzarella cheese ½ cup
  • Parmesan cheese ½ cup
  • Green onion (chopped) 2-3 pieces
  • Cherry tomato 5 pieces
  • Black truffle as appropriate

Seasonings:

  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste
  • Oil 2tbsp

Sauce:

  • Sour cream 50g

Cooking Steps:

  1. Season the zucchini with salt, pepper and nutmeg.
  2. Add the eggs and 1 tablespoon of oil to the flour and mix to form a batter. Squeeze out excess moisture from the zucchini. Then add the zucchini, onion and cheeses to the flour mixture and mix well.
  3. Heat a pan and add a little oil. Place 1 tablespoon of the batter and cook until both sides are golden brown.
  4. Transfer to a plate. Put a dollop of sour cream and garnish with chopped green onion, cherry tomatoes and black truffle on top to serve.
