Gooey Cheese Spring Rolls

材料:

  • 羽衣甘藍 (去莖)  1袋
  • 紫椰菜 (切絲)   ½個
  • 四色椒 (切絲)  各½個
  • 杏鮑菇 (切絲)    2隻
  • 雞蛋 (拂起)   1隻
  • 春卷皮   16塊
  • 純素車打芝士   適量

調味料:

  • 蒜頭 (切碎)   2顆
  • 薑 (切絲)    2片
  • 鹽   適量
  • 胡椒   適量

烹調步驟:

  1. 燒熱鑊下油,爆香薑及蒜頭,加入四色椒炒至微軟,然後加羽衣甘藍和紫椰菜炒勻,以鹽及糖調味,最後加入雞脾菇炒至軟身,盛起備用。
  2. 春卷皮鋪在平面上,羽衣甘藍饀料和純素芝士放上春卷皮中間位置,向上捲起至中間,摺入左右兩端,再捲起封口,掃上蛋漿,放在平底鑊煎至芝士溶掉及兩面呈金黃色即成。

 

Ingredients:

  • Kale (stalk removed)  1 pack
  • Purple cabbage (shredded)   ½ piece
  • Mixed Bell Pepper (shredded)  ½ piece for each colour)
  • French horn mushroom (shredded)  2 pieces
  • Egg (whisked)  1 piece
  • Spring roll paper  16 sheets
  • Vegan cheddar slice  as appropriate

Seasonings:

  • Garlic (chopped)   2 cloves
  • Ginger (julienned)   2 slices
  • Salt  to taste
  • Pepper  to taste

Cooking Steps:

    1. Add oil to a heated pan and sauté the ginger and garlic. Stir in the mixed bell peppers until slightly soft. Then add the kale and purple cabbage. Season with salt and pepper. Finally add the mushroom and cook until soft. Set aside.
    2. Place the spring roll wrapper on a surface. Put the fillings and vegan cheddar slice in the centre of the wrapper. Roll up half way and tuck in both ends. Continue to roll up and seal the edge. Brush with the egg wash and pan-fry until the cheese melts and both sides turn golden brown to serve.
